Instructions

  1. Preheat your oven to 425°F (220°C).
  2. If whole, separate the chicken wings into drumettes and flats. Pat them dry with paper towels.
  3. In a large bowl, combine chicken wings with olive oil, salt, black pepper, garlic powder, onion powder, and smoked paprika. Toss until evenly coated.
  4. Zest the lemons using a microplane, avoiding the white pith.
  5. Squeeze the juice from the lemons into a measuring cup, removing any seeds.
  6. In a small bowl, mix lemon zest, lemon juice, and honey (if using).
  7. Line a baking sheet with aluminum foil and place a wire rack on top. Arrange the seasoned wings in a single layer on the rack.
  8. Bake for 40-45 minutes, flipping halfway through for even cooking.
  9. Ensure the internal temperature reaches 165°F (74°C). Continue baking if necessary.
  10. Transfer the baked wings to a large bowl and pour the lemon pepper sauce over them. Toss gently to coat.
