Ingredients

Scale
  • 8 ounces elbow macaroni
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk (whole or 2% for creaminess)
  • 1 teaspoon Dijon mustard
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (optional for a kick)
  • 2 cups shredded sharp cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (for topping)
  • 1 tablespoon olive oil (for breadcrumbs)

Instructions

  1. Bring a large pot of salted water to a boil (about 1 tablespoon of salt).
  2. Add the elbow macaroni to the boiling water and cook according to package instructions (7-8 minutes) until al dente. Stir occasionally to prevent sticking.
  3. Drain the macaroni in a colander and rinse under cold water to stop the cooking process. Set aside.
  4. In a medium saucepan over medium heat, melt the unsalted butter without browning it.
  5. Sprinkle in the all-purpose flour and whisk continuously for 1-2 minutes until smooth and bubbly.
  6. Gradually pour in the milk while whisking constantly to avoid lumps. Continue whisking until the mixture thickens (about 5-7 minutes).
  7. Stir in the Dijon mustard, garlic powder, onion powder, and cayenne pepper (if using). Season with salt and pepper to taste.
  8. Lower the heat and add the cheddar, mozzarella, and Parmesan cheeses. Stir until melted and creamy.
  9. Add the drained macaroni to the cheese sauce and stir well to coat all the pasta.
  10. Taste the mixture and adjust seasoning if necessary.
  11. In a small bowl, mix the breadcrumbs with olive oil until evenly coated.
  12. Preheat your oven to 350°F (175°C).
  13. Pour the macaroni and cheese mixture into a greased 9×13 inch baking dish and spread evenly.
  14. Sprinkle the breadcrumb mixture evenly over the top.
  15. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown and the cheese is bubbling.
  16. Remove from the oven and let cool for 5-10 minutes before serving.
  17. Scoop out generous portions and enjoy!

Notes

  • For extra flavor, consider adding cooked bacon or vegetables like broccoli or spinach to the macaroni and cheese mixture before baking.
