Ingredients

Scale
  • 2 ripe bananas, mashed
  • 1 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 2 large eggs
  • 1 cup buttermilk
  • 1/4 cup maple syrup
  • 1 teaspoon vanilla extract
  • 1/2 cup unsalted butter

Instructions

  1. Melt the unsalted butter in a medium saucepan over medium heat, stirring occasionally.
  2. Continue cooking, stirring frequently, until the butter foams and turns a deep golden brown, about 5-7 minutes. Remove from heat immediately to prevent burning and let cool slightly.
  3. In a large mixing bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.
  4. In another bowl, combine the mashed bananas, brown sugar, granulated sugar, eggs, buttermilk, maple syrup, and vanilla extract. Whisk until smooth.
  5. Add the cooled brown butter to the wet ingredients and mix until well incorporated.
  6. Gradually fold the dry ingredients into the wet mixture using a spatula or wooden spoon, being careful not to overmix. The batter should be thick and slightly lumpy.
  7. Preheat your waffle iron according to the manufacturer’s instructions and lightly grease if necessary.
  8. Pour 1/2 to 3/4 cup of batter onto the center of the hot waffle iron. Close and cook for 4-5 minutes, or until golden brown and crisp.
  9. Carefully remove the waffle and place it on a wire rack to keep warm while cooking the remaining waffles.
  10. Serve the waffles stacked or individually, drizzled with additional maple syrup.
  11. Add a dollop of whipped cream or a scoop of vanilla ice cream for extra indulgence.
  12. Garnish with sliced fresh bananas and a sprinkle of chopped nuts for added texture.
  13. For a finishing touch, dust with powdered sugar or a sprinkle of cinnamon.

Notes

  • Ensure your baking powder is fresh for optimal rise.
  • For extra banana flavor, consider adding banana slices directly into the batter.
  • Substitute half of the all-purpose flour with whole wheat or oat flour for a lighter waffle.
  • Feel free to experiment with add-ins like chocolate chips or blueberries for a unique twist.
