These Meatloaf Cupcakes are a fun twist on a classic dish, featuring a savory blend of ground beef and pork topped with creamy mashed potatoes. Perfect for family dinners or gatherings, they offer a delicious and visually appealing way to enjoy comfort food.

  • 1/2 pound ground pork
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup milk
  • 1/4 cup ketchup
  • 1/4 cup finely chopped onion
  • 2 cloves garlic, minced
  • 1 large egg
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried Italian herbs (or mixed herbs)
  • 1 pound potatoes (Yukon Gold or Russet)
  • 1/2 cup sour cream
  • 1/4 cup butter
  • Salt and pepper to taste
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. In a large mixing bowl, combine the ground beef and ground pork.
  2. Add the breadcrumbs, grated Parmesan cheese, and milk to the meat mixture.
  3. Stir in the ketchup, chopped onion, minced garlic, egg, Worcestershire sauce, salt, black pepper, and dried Italian herbs. Mix until well combined.
  4. Set aside to let the flavors meld while you prepare the potatoes.
  5. Peel the potatoes and cut them into evenly sized chunks, about 1-2 inches.
  6. Place the potato chunks in a large pot and cover with cold water. Add a pinch of salt.
  7. Bring to a boil over high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
  8. Drain the potatoes and return them to the pot.
  9. Add sour cream and butter, then mash until smooth and creamy. Season with salt and pepper to taste.
  10. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or spray with non-stick cooking spray.
  11. Fill each muffin cup with the meatloaf mixture, pressing down gently. Fill to about 3/4 full.
  12. Create a small indentation in the center of each meatloaf cupcake.
  13. Bake for 20-25 minutes until cooked through and internal temperature reaches 160°F (70°C).
  14. Remove the meatloaf cupcakes from the oven and let cool for a few minutes.
  15. Pipe or spoon the mashed potatoes onto the top of each cupcake.
  16. Optionally, sprinkle with additional grated Parmesan cheese or paprika.
  17. Return the assembled cupcakes to the oven and bake for an additional 10-15 minutes until the mashed potatoes are heated through and slightly golden.
  18. Let cool for a few minutes before serving. Garnish with chopped chives or parsley if desired.
