  • ½ cup granulated sugar
  • 4 large egg yolks
  • ¼ cup cornstarch
  • 2 tablespoons unsalted butter
  • 1 teaspoon vanilla extract
  • 1 cup strawberries, hulled and sliced
  • 1 cup blueberries
  • 1 cup kiwi, peeled and sliced
  • 1 cup raspberries
  • 1 tablespoon lemon juice
  • ½ cup apricot jam
  • 1 tablespoon water

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, powdered sugar, and salt. Whisk together until well blended.
  2. Add the softened unsalted butter to the flour mixture. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.
  3. In a separate small bowl, whisk together the egg yolk and vanilla extract. Add this mixture to the flour and butter mixture.
  4. Mix until the dough comes together. If the dough is too crumbly, add a teaspoon of cold water at a time until it holds together.
  5. Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes to 1 hour.
  6. Preheat your oven to 350°F (175°C).
  7. Once the dough has chilled, remove it from the refrigerator. On a lightly floured surface, roll out the dough to about ¼ inch thick.
  8. Using a round cookie cutter or a glass, cut out circles of dough that are slightly larger than your tartlet pans.
  9. Gently press the dough circles into the tartlet pans, ensuring that the dough covers the bottom and sides evenly. Trim any excess dough hanging over the edges.
  10. Prick the bottom of each tart shell with a fork to prevent bubbling during baking.
  11. Place the tart shells in the preheated oven and bake for 15-20 minutes, or until they are lightly golden brown. Keep an eye on them to avoid over-baking.
  12. Once baked, remove the tart shells from the oven and allow them to cool completely in the pans before removing them.
  13. In a medium saucepan, heat the whole milk over medium heat until it begins to steam, but do not let it boil.
  14. In a separate bowl, whisk together the granulated sugar, egg yolks, and cornstarch until smooth and pale in color.
  15. Once the milk is heated, slowly pour it into the egg mixture while whisking constantly to temper the eggs. This prevents the eggs from scrambling.
  16. Return the mixture to the saucepan and cook over medium heat, whisking constantly until it thickens and starts to bubble. This should take about 5-7 minutes.
  17. Once thickened, remove the saucepan from the heat and stir in the unsalted butter and vanilla extract until fully incorporated.
  18. Transfer the pastry cream to a bowl, cover it with plastic wrap directly on the surface to prevent a skin from forming, and let it cool to room temperature. Once cooled, refrigerate until ready to use.
  19. While the pastry cream is cooling, prepare the fruit. Rinse and slice the strawberries, peel and slice the kiwi, and set aside the blueberries and raspberries.
  20. In a bowl, toss the prepared fruit with lemon juice to prevent browning and enhance flavor.
  21. Once the tart shells are cooled and the pastry cream is ready, fill each tart shell with the pastry cream, smoothing the top with a spatula.
  22. Arrange the prepared fruit on top of the pastry cream in a decorative pattern.
  23. If using the glaze, heat the apricot jam and water in a small saucepan until melted and smooth. Brush the glaze over the fruit for a shiny finish.
