Instructions

  1. In a large mixing bowl, combine the canned pumpkin puree, granulated sugar, and brown sugar. Whisk until smooth and well combined.
  2. Add the vegetable oil, eggs, and vanilla extract to the pumpkin mixture. Whisk until fully incorporated and creamy.
  3. In a separate bowl, sift together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, ground ginger, and salt.
  4. Gradually add the dry ingredients to the wet ingredients in three parts, mixing gently with a spatula or wooden spoon after each addition. Do not overmix; the batter should be just combined.
  5. If using, fold in the chocolate chips or chopped nuts.
  6. Preheat your oven to 350°F (175°C).
  7. Prepare your mini muffin tin by greasing it with cooking spray or lining it with mini muffin liners.
  8. Fill each muffin cup about 2/3 full with the pumpkin batter using a small cookie scoop or spoon.
  9. Gently tap the muffin tin on the counter to remove any air bubbles.
  10. Bake in the preheated oven for 15-18 minutes, checking for doneness at the 15-minute mark by inserting a toothpick into the center of a mini muffin. It should come out clean or with a few moist crumbs.
  11. Remove the muffin tin from the oven and let it cool on a wire rack for about 5 minutes.
  12. Carefully remove the mini pumpkin treats from the tin and place them on the wire rack to cool completely.
  13. Once cool, dust the mini pumpkin treats with powdered sugar if desired.
  14. Arrange on a serving platter or in a decorative basket.
  15. Store in an airtight container at room temperature for up to 3 days, in the refrigerator for up to a week, or freeze for up to 3 months.
