Instructions

  1. In a medium saucepan, combine the granulated sugar, unsweetened cocoa powder, unsalted butter, and milk. Place over medium heat, stirring continuously until the butter melts and the sugar dissolves (3-5 minutes). Bring to a rolling boil and boil for exactly 1 minute without stirring.
  2. Remove from heat and stir in the creamy peanut butter until melted. Add vanilla extract and salt, mixing well. Gradually fold in the quick-cooking oats until fully coated.
  3. Drop spoonfuls of the mixture onto a baking sheet lined with parchment paper, spacing them about 2 inches apart. Flatten slightly if desired. You should have approximately 24 cookies.
  4. Allow cookies to sit at room temperature for 30 minutes to 1 hour to set. Alternatively, refrigerate for 15-20 minutes to speed up the process.
