  • 8 ounces fettuccine pasta
  • 2 cups sliced mushrooms (cremini or button mushrooms work well)
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Cut the chicken breasts into bite-sized pieces and season with salt, pepper, and Italian seasoning. Set aside.
  2. Clean and slice the mushrooms. Mince the garlic cloves. Ensure all ingredients are prepped for a smooth cooking process.
  3. In a large skillet or deep pan, heat 2 tablespoons of olive oil over medium-high heat.
  4. Add the seasoned chicken pieces and cook for about 5-7 minutes, stirring occasionally, until browned and cooked through (internal temperature should reach 165°F/75°C).
  5. Remove the chicken from the pan and cover with aluminum foil to keep warm.
  6. In the same skillet, add the remaining tablespoon of olive oil. Drain excess fat if necessary, but leave enough for flavor.
  7. Add the sliced mushrooms and sauté for about 5 minutes until golden brown and moisture is released.
  8. Add the minced garlic and sauté for an additional 1-2 minutes, stirring frequently.
  9. Add the fettuccine pasta to the skillet, pour in the chicken broth, and bring to a boil.
  10. Once boiling, reduce heat to medium-low, add the fettuccine, and stir to submerge the pasta.
  11. Cover and cook for about 10-12 minutes, stirring occasionally, until al dente.
  12. After the pasta is cooked, remove the lid and stir in the heavy cream.
  13. Gradually add the grated Parmesan cheese, stirring continuously until melted and creamy. Adjust consistency with more broth or cream if needed.
  14. Return the cooked chicken to the skillet and stir to combine. Heat through for 2-3 minutes.
  15. Taste and adjust seasoning if necessary. Add more salt, pepper, or Italian seasoning as desired.
  16. Remove from heat and let sit for a minute to thicken slightly.
  17. Garnish with freshly chopped parsley before serving. Serve hot from the skillet or transfer to a serving dish.
