  • 1 cup of vegetable broth
  • 1 lemon, zested and juiced
  • Salt and pepper to taste

Instructions

  1. Fill a large pot with water, add a generous pinch of salt, and bring to a rolling boil over high heat.
  2. Add the pasta to the boiling water and cook according to package instructions until al dente (about 8-10 minutes). Stir occasionally to prevent sticking.
  3. Before draining, reserve about 1 cup of the pasta cooking water.
  4. Drain the pasta in a colander without rinsing.
  5. In a large skillet, heat olive oil over medium heat. Add sliced fennel and sauté for 5-7 minutes until tender and slightly caramelized.
  6. Stir in minced garlic and red pepper flakes, sautéing for an additional 1-2 minutes until fragrant.
  7. Add quartered artichoke hearts to the skillet and cook for another 3-4 minutes.
  8. Pour in vegetable broth and bring to a gentle simmer.
  9. Stir in lemon zest and juice, allowing the sauce to simmer for about 5 minutes.
  10. Taste and season with salt and pepper as needed.
  11. Add the drained pasta to the skillet, tossing to coat. If needed, add reserved pasta water for desired consistency.
  12. Taste and adjust seasoning, adding more red pepper flakes if desired.
  13. Serve the pasta in bowls or on plates, twirling for presentation.
  14. Sprinkle with grated Parmesan cheese and fresh parsley.
