4 ripe peaches, peeled and pitted
1 bottle (750ml) non-alcoholic sparkling wine or sparkling cider, chilled
2 tablespoons lemon juice, freshly squeezed
1 tablespoon simple syrup (optional, adjust to taste)
Peach slices or fresh raspberries, for garnish
Ice cubes (optional)
Instructions
Prepare the Peaches: Peel and pit the peaches. If peaches are firm, blanch them in boiling water for 30 seconds, then transfer to an ice bath.
Blend the Peaches: Place peaches and lemon juice in a blender or food processor.
Blend Until Smooth: Blend until completely smooth. If too thick, add a tablespoon or two of water or non-alcoholic sparkling wine.
Taste and Adjust Sweetness: Taste the puree. Add simple syrup, one teaspoon at a time, until desired sweetness is reached.
Strain the Puree (Optional): Strain the peach puree through a fine-mesh sieve for an extra smooth texture.
Chill the Puree: Cover and refrigerate for at least 30 minutes (or longer) to chill.
Prepare Your Glasses: Choose glasses (champagne flutes recommended). Chill glasses in the freezer for a few minutes before serving (optional).
Add Peach Puree to Glasses: Pour 2-3 tablespoons of chilled peach puree into each glass (about 1/4 to 1/3 full).
Top with Sparkling Wine: Gently top each glass with chilled non-alcoholic sparkling wine or sparkling cider, pouring slowly to prevent fizzing over. Fill almost to the top.
Gently Stir: Gently stir the peach puree and sparkling wine together with a long spoon or cocktail stirrer.
Add Ice (Optional): Add a few ice cubes to each glass if desired.
Garnish and Serve: Garnish with a slice of fresh peach or a few fresh raspberries. Serve immediately.
Notes
Use ripe, fragrant peaches for the best flavor.
If fresh peaches aren’t in season, use thawed frozen peaches.
Experiment with adding other fruits like strawberries, raspberries, or mangoes to the puree.
For a layered drink, pour sparkling wine over the back of a spoon to float it on top of the puree.
Add a splash of grenadine for color and sweetness.
Adjust simple syrup to taste.

Simple Syrup Recipe: Combine equal parts water and sugar in a saucepan. Heat over medium heat, stirring until the sugar is completely dissolved. Let the syrup cool completely before using. Store simple syrup in the refrigerator for up to two weeks.
