Peach Bellini Mocktail: A Refreshing Non-Alcoholic Recipe

A refreshing Peach Bellini Mocktail, perfect for celebrations! Made with fresh peach puree and non-alcoholic sparkling wine, it’s a delightful, non-alcoholic treat.

  • 4 ripe peaches, peeled and pitted
  • 1 bottle (750ml) non-alcoholic sparkling wine or sparkling cider, chilled
  • 2 tablespoons lemon juice, freshly squeezed
  • 1 tablespoon simple syrup (optional, adjust to taste)
  • Peach slices or fresh raspberries, for garnish
  • Ice cubes (optional)

Instructions

  1. Prepare the Peaches: Peel and pit the peaches. If peaches are firm, blanch them in boiling water for 30 seconds, then transfer to an ice bath.
  2. Blend the Peaches: Place peaches and lemon juice in a blender or food processor.
  3. Blend Until Smooth: Blend until completely smooth. If too thick, add a tablespoon or two of water or non-alcoholic sparkling wine.
  4. Taste and Adjust Sweetness: Taste the puree. Add simple syrup, one teaspoon at a time, until desired sweetness is reached.
  5. Strain the Puree (Optional): Strain the peach puree through a fine-mesh sieve for an extra smooth texture.
  6. Chill the Puree: Cover and refrigerate for at least 30 minutes (or longer) to chill.
  7. Prepare Your Glasses: Choose glasses (champagne flutes recommended). Chill glasses in the freezer for a few minutes before serving (optional).
  8. Add Peach Puree to Glasses: Pour 2-3 tablespoons of chilled peach puree into each glass (about 1/4 to 1/3 full).
  9. Top with Sparkling Wine: Gently top each glass with chilled non-alcoholic sparkling wine or sparkling cider, pouring slowly to prevent fizzing over. Fill almost to the top.
  10. Gently Stir: Gently stir the peach puree and sparkling wine together with a long spoon or cocktail stirrer.
  11. Add Ice (Optional): Add a few ice cubes to each glass if desired.
  12. Garnish and Serve: Garnish with a slice of fresh peach or a few fresh raspberries. Serve immediately.

Notes

  • Use ripe, fragrant peaches for the best flavor.
  • If fresh peaches aren’t in season, use thawed frozen peaches.
  • Experiment with adding other fruits like strawberries, raspberries, or mangoes to the puree.
  • For a layered drink, pour sparkling wine over the back of a spoon to float it on top of the puree.
  • Add a splash of grenadine for color and sweetness.
  • Adjust simple syrup to taste.
  • Prepare the peach puree ahead of time and store in the refrigerator for up to 24 hours.
  • Simple Syrup Recipe: Combine equal parts water and sugar in a saucepan. Heat over medium heat, stirring until the sugar is completely dissolved. Let the syrup cool completely before using. Store simple syrup in the refrigerator for up to two weeks.
