Total Time:160 minutes
Yield:8 servings 1x
Ingredients
Scale
8 ripe peaches, pitted and roughly chopped
8 cups water, divided
1 cup granulated sugar (adjust to taste)
4 black tea bags (or equivalent loose leaf tea)
1 lemon, thinly sliced
Fresh mint sprigs, for garnish (optional)
Ice cubes, for serving
Instructions
Combine Peaches and Water: In a medium saucepan, combine the chopped peaches and 2 cups of water.
Simmer Until Soft: Bring the mixture to a simmer over medium heat. Reduce the heat to low, cover, and let it simmer for about 15-20 minutes, or until the peaches are very soft and easily mashed.
Mash the Peaches: Remove the saucepan from the heat. Using a potato masher or the back of a spoon, thoroughly mash the peaches until you have a chunky puree.
Strain the Puree: Place a fine-mesh sieve or cheesecloth-lined colander over a large bowl. Pour the peach puree into the sieve and let it drain naturally. Gently press on the solids to extract more juice.
Discard the Solids: Once you’ve extracted as much juice as possible, discard the peach solids.
Heat the Water: In a separate saucepan, bring 4 cups of water to a boil.
Steep the Tea: Remove the saucepan from the heat and add the tea bags. Let the tea steep for 3-5 minutes.
Remove Tea Bags: After steeping, remove the tea bags and discard them.
Add Sugar: While the tea is still hot, add the sugar and stir until it is completely dissolved.
Cool the Tea: Let the tea cool to room temperature.
Combine Peach Juice and Tea: In a large pitcher, combine the cooled peach juice and the cooled tea.
Add Remaining Water: Add the remaining 2 cups of water to the pitcher.
Add Lemon Slices: Add the thinly sliced lemon to the pitcher.
Stir Well: Stir everything together well.
Chill: Cover the pitcher and refrigerate for at least 2 hours, or preferably overnight.
Prepare Glasses: Fill glasses with ice cubes.
Pour Iced Tea: Pour the chilled peach iced tea into the glasses.
Garnish (Optional): Garnish with fresh mint sprigs, if desired.
Serve and Enjoy: Serve immediately and enjoy!
Notes
Adjust the amount of sugar to your liking.
Experiment with different types of tea.
Add other fruits to the peach puree, such as raspberries, strawberries, or blueberries.
Top off each glass with sparkling water or club soda for a fizzy twist.
For an even more intense peach flavor, make a peach simple syrup by simmering equal parts peach juice and sugar until the sugar is dissolved.
For an adult version, add a shot of bourbon to each glass.
Blend the iced tea with ice for a frozen slushie.
Pour the iced tea into popsicle molds and freeze for a refreshing treat.
Leftover peach iced tea can be stored in the refrigerator for up to 3 days.
