  • 1/2 cup granulated sugar (adjust to taste)
  • 1/4 cup water
  • 1 tablespoon lemon juice (freshly squeezed)

  • Optional: Peach slices for decoration (thinly sliced)

Instructions

  1. Prepare the Peaches: Blanch peaches in boiling water for 30-60 seconds, then transfer to an ice bath. Peel, pit, and roughly chop.
  2. Combine Ingredients: In a blender or food processor, combine chopped peaches, sugar, water, and lemon juice (and almond extract, if using).
  3. Blend Until Smooth: Blend until completely smooth. Strain through a fine-mesh sieve for extra smoothness (optional).
  4. Taste and Adjust: Taste and adjust sweetness with more sugar or lemon juice as needed. Remember frozen treats taste less sweet.
  5. Prepare the Molds: Clean and dry popsicle molds.
  6. Add Peach Slices (Optional): Arrange thin peach slices along the sides of the molds for visual appeal.
  7. Pour in the Puree: Carefully pour peach puree into the molds, leaving a little space at the top.
  8. Insert Popsicle Sticks: Insert popsicle sticks into the center of each mold.
  9. Freeze for at Least 6 Hours: Freeze for at least 6 hours, or preferably overnight, until completely frozen solid.
  10. Loosen the Popsicles: Run the molds under warm water for a few seconds or dip in a bowl of warm water.
  11. Gently Pull Out the Popsicles: Gently pull out the popsicles by the sticks.
