1 cup frozen pineapple chunks
1/2 cup canned coconut milk (full-fat for best results)
1/4 cup pineapple juice
1/4 cup white rum (optional, for an adult version)
1/4 cup milk (dairy or non-dairy, your preference)
2 tablespoons cream of coconut
1 tablespoon lime juice (freshly squeezed is best!)
1/2 cup vanilla ice cream (or coconut ice cream for extra coconut flavor)
Whipped cream, for topping (optional)
Maraschino cherries, for garnish (optional)
Pineapple wedges, for garnish (optional)
Ice cubes (optional, for a thicker shake)
Instructions
Combine Pineapple and Coconut: In a blender, add the frozen pineapple chunks and the canned coconut milk.
Add Juices: Pour in the pineapple juice and the freshly squeezed lime juice.
Add Rum (Optional): If making an adult version, add the white rum.
Sweeten: Add the cream of coconut.
Blend: Blend all ingredients until smooth, scraping down the sides as needed.
Incorporate Milk: Pour in the milk (dairy or non-dairy).
Add Ice Cream: Add the vanilla (or coconut) ice cream. Add ice cubes for a thicker shake.
Blend Again: Blend until smooth and thick.
Check Consistency: Add more milk if too thick, or more ice cream/ice cubes if too thin.
Pour into Glasses: Pour the milkshake into glasses.
Add Whipped Cream (Optional): Top with whipped cream, if desired.
Garnish: Garnish with maraschino cherries and pineapple wedges.

Notes
For a Thicker Shake: Use more frozen pineapple chunks or add a few ice cubes. You can also freeze the coconut milk in ice cube trays and add those to the blender.
For a Sweeter Shake: Add a little more cream of coconut or a tablespoon of honey or agave nectar.
For a Tangier Shake: Add a little more lime juice.
For a Vegan Shake: Use non-dairy milk, coconut ice cream, and vegan whipped cream.
