Instructions

  1. Start by selecting a ripe pineapple. Slice off the top and bottom to create a stable base. Stand it upright and slice down the sides to remove the skin. Cut in half lengthwise, remove the core, and dice the flesh into small pieces.
  2. Cut the red bell pepper in half, remove seeds and membranes, and chop into small pieces. Peel and finely chop the red onion. Soak in cold water for 10 minutes if you prefer a milder flavor.
  3. Slice the jalapeño in half, remove seeds and membranes, and mince finely. Wash hands thoroughly after handling.
  4. Rinse cilantro under cold water, shake off excess, and chop coarsely. Roll limes on the countertop to release juices, then cut in half and squeeze into a bowl.
  5. In a large bowl, combine diced pineapple, chopped red bell pepper, red onion, minced jalapeño, and chopped cilantro. Mix gently.
  6. Pour lime juice over the mixture. If desired, drizzle in honey. Season with salt and pepper to taste.
  7. Taste the salsa and adjust lime juice, salt, or jalapeño as needed.
  8. Cover the bowl with plastic wrap or transfer to an airtight container. Chill in the refrigerator for at least 30 minutes.
  9. After chilling, give the salsa a gentle stir before serving.
  10. Serve with tortilla chips, grilled chicken, fish, shrimp, or as a topping for tacos and burgers.
  11. Garnish with additional cilantro leaves or lime wedges for an appealing presentation.
  12. Store leftovers in an airtight container in the refrigerator for 3-5 days. Drain excess liquid if necessary before serving again.
