  • 1 cup heavy cream
  • 1/2 cup white chocolate chips
  • 1/4 cup unsalted pistachios, shelled and finely chopped
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Whipped cream, for topping
  • Extra chopped pistachios, for garnish
  • Optional: Green food coloring (for a more vibrant color)

Instructions

  1. Finely chop the shelled pistachios using a food processor. Set aside a tablespoon for garnish.
  2. In a medium saucepan, combine whole milk and heavy cream. Heat over medium until it simmers, stirring occasionally to prevent scorching.
  3. Stir in the finely chopped pistachios and let the mixture simmer for 5-7 minutes, stirring occasionally.
  4. Strain the mixture through a fine-mesh sieve into a bowl or another saucepan, pressing down on the pistachios to extract as much liquid as possible. Discard the solids.
  5. Return the strained mixture to the saucepan over low heat. Add white chocolate chips and stir continuously until melted and smooth.
  6. Stir in vanilla extract and salt. If desired, add a few drops of green food coloring and mix until evenly distributed.
  7. Increase heat slightly and bring the mixture to a gentle simmer for 2-3 minutes, stirring occasionally.
  8. In a mixing bowl, whip heavy cream with a tablespoon of sugar until soft peaks form (about 3-5 minutes). Set aside.
  9. Pour the pistachio white hot chocolate into mugs.
  10. Generously dollop whipped cream on top of each mug.
  11. Sprinkle reserved chopped pistachios over the whipped cream and drizzle with melted white chocolate if desired.
