Ingredients

Scale
  • 1 pre-baked pie crust (9-inch)
  • 1 cup granulated sugar
  • 1 cup packed brown sugar
  • 1 cup corn syrup
  • 1/2 cup unsalted butter, melted
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 cup chopped pecans
  • 1 cup mini marshmallows
  • 1/2 cup chocolate chips (optional)
  • Whipped cream for serving (optional)

Instructions

  1. In a large mixing bowl, combine the granulated sugar and brown sugar using a whisk to break up any lumps.
  2. Add the corn syrup to the sugar mixture and stir until fully dissolved.
  3. Pour in the melted butter (ensure it’s not too hot) and mix until combined.
  4. Crack the eggs into a separate bowl, then add them one at a time to the mixture, stirring continuously.
  5. Add the vanilla extract and salt, stirring until well combined.
  6. Fold in the chopped pecans gently into the filling.
  7. Optionally, add the mini marshmallows and chocolate chips, folding them in carefully.
  8. Preheat your oven to 350°F (175°C). Prepare the pie crust if making from scratch or ensure a store-bought crust is thawed.
  9. Pour the filling into the pre-baked pie crust, using a spatula to distribute evenly.
  10. Place the pie on a baking sheet and transfer it to the oven. Bake for 45-50 minutes, or until the filling is set and the top is golden brown.
  11. Remove the pie from the oven and let it cool on a wire rack for at least 2 hours.
  12. Slice into wedges and serve with whipped cream if desired.
  13. Store any leftovers in the refrigerator for up to 3 days.

Notes

  • Ensure all ingredients are at room temperature for easier mixing.
  • Toast pecans in a dry skillet for a nuttier flavor, allowing them to cool before adding.
  • For an adult twist, add a splash of bourbon or rum to the filling.
