Crispy Potato Chip Chicken offers a fun and crunchy twist on classic breaded chicken. Boneless chicken breasts are seasoned, dipped in a mustard-egg mixture, and coated with crushed potato chips before baking to golden perfection.   • 1 teaspoon of paprika

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the chicken breasts on a cutting board. If thick, butterfly or pound to an even thickness of about 1 inch.
  3. In a small bowl, mix salt, pepper, garlic powder, onion powder, and paprika. Rub this mixture all over the chicken breasts.
  4. In three shallow dishes, place flour in the first, whisk eggs and Dijon mustard in the second, and crushed potato chips in the third.
  5. Crush the potato chips in a zip-top bag until they are in small, even pieces.
  6. Dip each chicken breast into the flour, coating evenly and shaking off excess.
  7. Next, dip the floured chicken into the egg mixture, ensuring it is fully coated.
  8. Press the chicken into the crushed potato chips, ensuring a thorough coating. Repeat for all chicken breasts.
  9. Line a baking sheet with parchment paper or grease it lightly.
  10. Place the breaded chicken breasts on the baking sheet, spaced apart.
  11. Bake for 25-30 minutes, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  12. For extra crispiness, broil for the last 2-3 minutes, watching closely to prevent burning.
  13. Let the chicken rest for about 5 minutes after removing from the oven.
  14. Slice into strips or serve whole. Pair with sides like mashed potatoes, salad, or steamed vegetables.
  15. Garnish with fresh herbs or a squeeze of lemon juice for added flavor.
  16. Cool completely before transferring leftovers to an airtight container. Store in the refrigerator for up to 3 days.
