  • 1 medium onion, finely chopped
  • 2 large eggs
  • 1/4 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder (optional)
  • Vegetable oil for frying
  • 1 pound ground beef or pork (or a mix of both)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (optional)
  • 1 tablespoon vegetable oil (for cooking the filling)

Instructions

  1. In a large skillet, heat 1 tablespoon of vegetable oil over medium heat.
  2. Add the finely chopped onion and sauté for about 3-4 minutes until it becomes translucent.
  3. Stir in the minced garlic and cook for an additional minute, being careful not to let it burn.
  4. Add the ground meat to the skillet, breaking it up with a spatula. Cook until browned, about 5-7 minutes.
  5. Season the meat with paprika, salt, and black pepper. If you’re using parsley, stir it in now.
  6. Once the meat is fully cooked, remove it from the heat and let it cool while you prepare the potato pancakes.
  7. In a large bowl, grate the peeled potatoes using a box grater or a food processor.
  8. Once grated, place the potatoes in a clean kitchen towel or cheesecloth. Squeeze out as much moisture as possible.
  9. In the same bowl, add the finely chopped onion, eggs, flour, salt, black pepper, and garlic powder (if using). Mix everything together until well combined.
  10. Taste the batter and adjust the seasoning if necessary.
  11. Heat a generous amount of vegetable oil in a large skillet over medium heat.
  12. Once the oil is hot, take about 1/4 cup of the potato batter and drop it into the skillet, flattening it slightly with the back of a spatula. Repeat this process, leaving enough space between each pancake.
  13. Cook the pancakes for about 4-5 minutes on one side until they are golden brown and crispy. Flip them carefully using a spatula.
  14. Cook the other side for another 4-5 minutes until it’s also golden brown. If the pancakes are browning too quickly, reduce the heat slightly.
  15. Once cooked, transfer the pancakes to a plate lined with paper towels to absorb any excess oil. Repeat the process with the remaining batter, adding more oil to the skillet as needed.
  16. Take one potato pancake and place a spoonful of the meat filling in the center.
  17. Fold the pancake over the filling or serve it open-faced, as desired.
