  • 1 cup light brown sugar
  • 1/2 cup corn syrup
  • 1/4 cup unsalted butter, melted
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground cinnamon (optional)
  • 1 egg, beaten (for egg wash)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Roll out each thawed puff pastry sheet on a lightly floured surface to about 1/8 inch thick.
  3. Cut out circles (about 4 inches in diameter) from the rolled-out pastry, yielding around 12 circles.
  4. Place the pastry circles on a parchment-lined baking sheet, leaving space between each.
  5. Prick the center of each circle with a fork to prevent excessive puffing.
  6. In a large mixing bowl, combine chopped pecans, brown sugar, corn syrup, melted butter, eggs, vanilla extract, salt, and ground cinnamon (if using).
  7. Whisk until well combined and thick.
  8. Scoop about 1 tablespoon of pecan filling into the center of each pastry circle.
  9. Fold the edges of each circle slightly to create a border around the filling.
  10. Brush the edges with the beaten egg for a golden finish.
  11. Optionally, use leftover pastry scraps to create decorative shapes on top of the filling, brushing them with egg wash.
  12. Bake in the preheated oven for 20-25 minutes, or until golden brown and puffed.
  13. Let cool on the baking sheet for 5 minutes before transferring to a wire rack to cool completely.
  14. Serve warm or at room temperature, optionally dusted with powdered sugar.
