  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 8 sandwich rolls or buns
  • Coleslaw (optional, for topping)

Instructions

  1. Season the beef chuck roast generously with salt and pepper.
  2. In a large skillet, heat the olive oil over medium-high heat. Sear the roast on all sides until browned, about 4-5 minutes per side. Remove and set aside.
  3. In the same skillet, sauté the sliced onion for 3-4 minutes until translucent. Add minced garlic and cook for an additional minute.
  4. In a large slow cooker, combine beef broth, barbecue sauce, Worcestershire sauce, brown sugar, apple cider vinegar, smoked paprika, ground cumin, and chili powder. Stir well.
  5. Place the seared roast into the slow cooker, ensuring it is submerged in the sauce. Add sautéed onions and garlic on top.
  6. Cover and cook on low for 8-10 hours or high for 4-5 hours until fork-tender.
  7. Remove the roast from the slow cooker and shred it using two forks.
  8. Return the shredded beef to the slow cooker, stir to coat in the sauce, and let it sit on warm for 15-20 minutes.
  9. Preheat the oven to 350°F (175°C). Slice sandwich rolls in half and place cut side up on a baking sheet.
  10. Toast the rolls for 5-7 minutes until lightly golden. Remove and let cool slightly.
  11. Pile shredded beef onto the bottom half of each toasted roll, adding sauce for extra flavor.
