Raspberry Chia Pudding: A Healthy and Delicious Breakfast Recipe

This Raspberry Chia Pudding is a nutritious and delicious dessert featuring creamy chia pudding layered with vibrant raspberry puree. It’s easy to prepare, perfect for breakfast or a sweet treat, and can be made ahead of time for convenience. Enjoy it chilled, garnished with fresh raspberries and mint for a refreshing touch!

  • 1 cup unsweetened almond milk (or any milk of your choice)
  • 1/2 cup fresh or frozen raspberries
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup (or honey, if not vegan)
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • Fresh raspberries and mint leaves for garnish (optional)

Instructions

  1. In a medium-sized mixing bowl, combine the almond milk, maple syrup, vanilla extract, and a pinch of salt. Whisk until well combined.
  2. Add the chia seeds to the mixture and stir well to ensure even distribution.
  3. Let the mixture sit for about 5 minutes, then stir again to break up any clumps.
  4. Cover the bowl with plastic wrap or transfer to a jar with a lid. Refrigerate for at least 2 hours or overnight.
  5. If using fresh raspberries, rinse and pat dry. If using frozen, no need to thaw.
  6. In a blender or food processor, blend the raspberries until smooth. Add a teaspoon of maple syrup or honey if desired. Adjust sweetness to taste.
  7. Once blended, set the raspberry puree aside. Optionally, strain through a fine-mesh sieve for a smoother texture.
  8. After the chia pudding has set, stir it well. If too thick, add a splash of almond milk.
  9. In serving glasses, layer the chia pudding (1/4 to 1/3 cup) followed by the raspberry puree (2 tablespoons). Repeat layers until glasses are filled, finishing with raspberry puree.
  10. Garnish with fresh raspberries and mint leaves. Serve immediately or refrigerate until ready to enjoy.
