Raspberry Lemonade Drink: Refreshing Recipe for Summer Sips

This refreshing Raspberry Lemonade blends tart lemons and sweet raspberries, making it a perfect drink for hot days or any occasion. Garnished with fresh mint and extra raspberries, it’s a beautiful and delicious treat that’s easy to prepare and enjoy!

  • 1 cup fresh raspberries (plus extra for garnish)
  • 1 cup freshly squeezed lemon juice (about 46 lemons)
  • 1 cup granulated sugar
  • 4 cups cold water
  • Ice cubes
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. In a blender, add 1 cup of fresh raspberries (thawed if using frozen).
  2. Blend on high speed until completely smooth (about 30 seconds to 1 minute).
  3. Strain the raspberry puree through a fine-mesh sieve into a bowl or measuring cup, using a spatula to press it through for maximum extraction.
  4. Set the raspberry puree aside (you should have about ½ to ¾ cup).
  5. In a medium saucepan, combine 1 cup of granulated sugar and 1 cup of water.
  6. Heat over medium heat, stirring occasionally until the sugar has completely dissolved (about 3-5 minutes).
  7. Remove from heat and let cool for a few minutes.
  8. In a large pitcher, combine the freshly squeezed lemon juice and the cooled simple syrup. Stir well.
  9. Pour the raspberry puree into the pitcher with the lemonade base and stir gently to combine.
  10. Add the remaining 3 cups of cold water to the pitcher and stir well.
  11. Taste the lemonade; adjust sweetness with more sugar or simple syrup if desired, or add more water if too tart.
  12. Cover the pitcher and refrigerate for at least 1-2 hours to allow flavors to meld.
  13. Fill glasses with ice cubes and pour the chilled raspberry lemonade over the ice.
  14. Garnish with fresh raspberries and a sprig of mint. Optionally, add a slice of lemon on the rim of the glass.

Notes

  • You can substitute or add other berries like strawberries or blueberries for a mixed berry lemonade.
  • For a fizzy version, add a splash of sparkling water just before serving.
