  • 1 teaspoon ground cinnamon

  • 2 large eggs

Instructions

  1. If using a pre-made pie crust, let it sit at room temperature for about 10 minutes.
  2. For a homemade crust, combine 1 1/4 cups flour, 1/2 teaspoon salt, and 1/2 cup cold butter in a bowl. Mix until it resembles coarse crumbs.
  3. Gradually add 3-4 tablespoons of ice water until the dough comes together. Form into a disk, wrap in plastic, and refrigerate for at least 30 minutes.
  4. Roll out the chilled dough on a floured surface to fit a 9-inch pie pan. Transfer to the pan, trim edges, and crimp if desired. Refrigerate while preparing the filling.
  5. In a medium bowl, whisk together flour, brown sugar, granulated sugar, baking soda, cinnamon, ginger, cloves, and salt.
  6. In a large bowl, combine melted butter, molasses, hot water, eggs, and vanilla extract. Whisk until smooth.
  7. Gradually add the dry mixture to the wet mixture, stirring gently until just combined.
  8. Preheat the oven to 375°F (190°C).
  9. Pour the filling into the prepared crust and spread evenly. Optionally, sprinkle extra cinnamon on top.
