Instructions

  1. Clean the Shrimp: Rinse the shrimp under cold water and pat dry with paper towels.
  2. Marinate the Shrimp: In a medium bowl, combine shrimp with 1 tablespoon soy sauce, a pinch of salt, and pepper. Let marinate for 15-20 minutes.
  3. Prepare the Asparagus: Trim the woody ends of the asparagus and cut into 2-inch pieces.
  4. Chop the Vegetables: Slice the red bell pepper and trim the snap peas.
  5. Heat the Oil: In a large skillet or wok, heat 2 tablespoons of vegetable oil over medium-high heat.
  6. Cook the Shrimp: Add marinated shrimp in a single layer. Cook for 2-3 minutes until pink and opaque, then flip and cook for another 1-2 minutes. Remove from skillet and set aside.
  7. Sauté the Aromatics: In the same skillet, add more oil if needed, then add minced garlic and ginger. Stir-fry for 30 seconds until fragrant.
  8. Add the Vegetables: Add asparagus, red bell pepper, and snap peas. Stir-fry for 3-4 minutes until tender-crisp.
  9. Combine Shrimp and Vegetables: Return shrimp to the skillet and stir to combine.
  10. Make the Sauce: In a small bowl, mix remaining 2 tablespoons soy sauce, oyster sauce (if using), cornstarch, and water. Whisk until smooth.
  11. Add the Sauce: Pour sauce over shrimp and vegetables. Stir well and cook for an additional 1-2 minutes until sauce thickens.
  12. Taste and Adjust: Taste the stir-fry and adjust seasoning with salt or more soy sauce if needed.
  13. Prepare the Serving Dish: Ensure rice or noodles are cooked and ready.
  14. Serve the Stir-Fry: Spoon the stir-fry over rice or noodles.
  15. Garnish: Sprinkle with sesame seeds and chopped green onions if desired.
