Ingredients

Scale
  • 1 pound large shrimp, peeled and deveined
  • 8 ounces pasta (linguine or spaghetti)
  • 4 tablespoons unsalted butter
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon red pepper flakes
  • 1 cup dry white wine
  • 1 lemon, zested and juiced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh parsley, chopped
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional, for topping)

Instructions

  1. Bring a large pot of salted water to a boil. Add about a tablespoon of salt to enhance the pasta’s flavor.
  2. Once boiling, add the pasta and cook according to package instructions until al dente (about 8-10 minutes). Drain and set aside, reserving 1 cup of pasta water.
  3. In a large skillet, heat olive oil and 2 tablespoons of butter over medium heat.
  4. Add minced garlic and red pepper flakes, sautéing for 1-2 minutes until fragrant.
  5. Add shrimp, seasoning with salt and pepper. Cook for 2-3 minutes on each side until pink and opaque.
  6. Pour in white wine and simmer for 3-4 minutes to cook off the alcohol.
  7. Stir in lemon zest and juice, then add heavy cream. Simmer for another 2-3 minutes until the sauce thickens slightly.
  8. In a large mixing bowl, combine cooked pasta with the shrimp and sauce mixture. If too thick, add reserved pasta water to reach desired consistency.
  9. Stir in grated Parmesan cheese and half of the chopped parsley.
  10. Preheat oven to 350°F (175°C) and grease a large baking dish with butter or cooking spray.
  11. Pour the shrimp and pasta mixture into the prepared dish, spreading evenly.
  12. Sprinkle shredded mozzarella cheese on top. Optionally, add breadcrumbs for crunch and drizzle with olive oil.
  13. Bake in the preheated oven for 25-30 minutes, or until cheese is bubbly and golden brown. Keep an eye on it to prevent over-browning.
  14. Let sit for 5 minutes before serving.
  15. Sprinkle remaining chopped parsley over the top before serving. Pair with a side salad or garlic bread, and enjoy with a chilled glass of white wine.
