Skillet Chicken Fajitas: A Quick and Delicious Recipe for Weeknight Dinners

These Chicken Fajitas are a quick and flavorful weeknight meal, featuring marinated chicken strips sautéed with vibrant bell peppers and onions, all wrapped in warm tortillas. Customize with your favorite toppings for a delicious and satisfying dish!

  • 1 pound boneless, skinless chicken breasts, sliced into thin strips
  • 2 tablespoons olive oil
  • 1 medium onion, sliced
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • Juice of 1 lime
  • 8 small flour or corn tortillas
  • Fresh cilantro, chopped (for garnish)
  • Optional toppings: sour cream, guacamole, salsa, shredded cheese

Instructions

  1. In a large bowl, combine the sliced chicken with 1 tablespoon of olive oil, minced garlic, ground cumin, chili powder, smoked paprika, salt, and pepper. Squeeze the juice of half a lime over the chicken and mix until well coated. Cover and marinate in the refrigerator for at least 30 minutes.
  2. Heat a large skillet over medium-high heat and add the remaining tablespoon of olive oil. Once hot, add the marinated chicken strips in a single layer. Cook for 5-7 minutes, stirring occasionally, until cooked through (internal temperature should reach 165°F/75°C). Remove chicken and set aside.
  3. In the same skillet, add the sliced onion and bell peppers. Sauté for 5-6 minutes until tender and slightly caramelized. Return the chicken to the skillet, mix well, and squeeze the remaining lime juice over the mixture.
  4. Warm the tortillas using one of the following methods:
    • Stovetop: Place a dry skillet over medium heat and warm each tortilla for about 30 seconds on each side.
    • Microwave: Wrap a stack of tortillas in a damp paper towel and microwave for 30 seconds to 1 minute.
    • Oven: Preheat to 350°F (175°C), wrap tortillas in aluminum foil, and heat for 10-15 minutes.
  5. Take a warm tortilla, place a generous amount of the chicken and vegetable mixture in the center, and add your favorite toppings. Sprinkle with fresh chopped cilantro.
  6. Serve immediately while warm, or present the chicken and vegetable mixture on a platter alongside warm tortillas and toppings for a build-your-own fajita experience.
