Smashed Potatoes Cooking Guide: Perfect Techniques for Crispy and Creamy Results

These crispy smashed baby potatoes are a delicious side dish with tender centers and golden, crunchy edges. Infused with garlic and herbs, they make a perfect accompaniment to any meal or a tasty snack on their own!

  • 4 tablespoons of olive oil
  • 4 cloves of garlic, minced
  • 1 teaspoon of salt
  • 1/2 teaspoon of black pepper
  • 1 teaspoon of dried rosemary
  • 1/2 teaspoon of paprika (optional)
  • Fresh parsley, chopped (for garnish)
  • Grated Parmesan cheese (optional)

Instructions

  1. Wash the Potatoes: Rinse the baby potatoes under cold water to remove any dirt. Use a vegetable brush to scrub them gently.
  2. Boil the Potatoes: Place the washed potatoes in a large pot and cover with cold water. Add a pinch of salt. Bring to a boil over high heat, then reduce to medium and simmer for 15-20 minutes until fork-tender.
  3. Drain the Potatoes: Carefully drain the cooked potatoes in a colander and let them sit for a few minutes to steam dry.
  4. Preheat the Oven: Preheat your oven to 425°F (220°C).
  5. Prepare a Baking Sheet: Line a large baking sheet with parchment paper or lightly grease it with olive oil.
  6. Smash the Potatoes: Once cool enough to handle, place the potatoes on the baking sheet. Use the bottom of a glass or a potato masher to gently press down on each potato until flattened to about 1/2 inch thick.
  7. Make the Garlic Oil: In a small bowl, mix olive oil, minced garlic, salt, black pepper, dried rosemary, and paprika (if using).
  8. Drizzle the Oil: Generously drizzle the garlic oil mixture over each smashed potato, ensuring some garlic is on top.
  9. Add Extra Seasoning: Optionally, sprinkle extra salt and pepper on top, and add grated Parmesan cheese if desired.
  10. Bake the Potatoes: Bake in the preheated oven for 25-30 minutes until golden brown and crispy. Flip halfway through for extra crispiness.
  11. Garnish the Potatoes: Remove from the oven and let cool for a few minutes. Sprinkle with freshly chopped parsley.
  12. Serve: Transfer to a serving platter and add more Parmesan cheese if desired. Enjoy warm!
