Instructions

  1. Wash the green beans thoroughly under cold water. Trim the ends off each bean and cut them into 2-inch pieces.
  2. Peel the potatoes and dice them into small cubes, about 1-inch in size.
  3. Chop the onion finely and mince the garlic.
  4. In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion and sauté for about 3-4 minutes until translucent.
  5. Add the minced garlic and sauté for an additional 1-2 minutes, stirring frequently.
  6. Add the diced potatoes to the pot and stir them in with the onions and garlic. Cook for about 5 minutes.
  7. Pour in the vegetable broth, ensuring the potatoes are fully submerged. Bring to a gentle boil.
  8. Once boiling, reduce the heat to low and cover the pot. Let the potatoes simmer for about 10 minutes.
  9. After 10 minutes, add the trimmed green beans to the pot and stir gently.
  10. Season with salt, black pepper, smoked paprika, and dried thyme. Stir and cover the pot again.
  11. Allow to simmer for an additional 15-20 minutes, or until the green beans are tender and the potatoes are fully cooked. Stir occasionally.
