Yield:24 bars 1x
Ingredients
Scale
1 cup granulated sugar
1 cup light corn syrup
1 cup peanut butter (creamy or chunky, your preference!)
6 cups Special K cereal
1 (12 ounce) package semi-sweet chocolate chips
1 (12 ounce) package butterscotch chips
Instructions
In a large saucepan, combine granulated sugar and light corn syrup. Place over medium heat and stir constantly until the sugar is completely dissolved (about 5-7 minutes).
Remove from heat and add peanut butter. Stir until the peanut butter is completely melted and smooth.
Pour in Special K cereal and gently fold until the cereal is evenly coated.
Grease a 9×13 inch baking pan.
Pour the Special K mixture into the prepared pan and press evenly using a spatula or greased hands.
In a microwave-safe bowl, combine semi-sweet chocolate chips and butterscotch chips.
Microwave in 30-second intervals, stirring after each interval, until completely melted and smooth (about 1-2 minutes total).
Pour the chocolate topping over the Special K mixture in the pan.
Spread evenly with a spatula.
Place the baking pan in the refrigerator to chill for at least 30 minutes, or until the chocolate topping is firm.
Remove from the refrigerator and cut into squares.
Store in an airtight container at room temperature or in the refrigerator.
