  • 10 fresh mint leaves
  • 1 lime, juiced
  • 2 tablespoons agave syrup (or honey)
  • 12 fresh jalapeños, sliced
  • 1 cup white rum
  • 2 cups club soda
  • Ice cubes
  • Mint sprigs for garnish
  • Pomegranate seeds for garnish

Instructions

  1. Gather all your ingredients. If using a whole pomegranate, cut it in half and tap the back to release the seeds. Juice the lime and slice the jalapeños, removing seeds for a milder drink. Wash and dry the mint leaves.
  2. In a sturdy glass or cocktail shaker, add the mint leaves and sliced jalapeños. Gently muddle to release their flavors without shredding the mint too much. Add half of the pomegranate seeds and muddle slightly.
  3. Pour in the lime juice and agave syrup, balancing the flavors of spice and tartness.
  4. Add the white rum to the muddled mixture. If using a cocktail shaker, fill it with ice and shake vigorously for 15-20 seconds. If mixing in a glass, stir well.
  5. Taste the mixture and adjust sweetness or acidity as desired by adding more agave syrup or lime juice.
  6. Fill two tall glasses with ice cubes. Strain the muddled mixture over the ice using a fine mesh strainer. Top with club soda and stir gently.
  7. Garnish with mint sprigs and pomegranate seeds. Serve immediately and enjoy!
