  • 1 teaspoon vanilla extract
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup chopped fresh mint (for garnish)

Instructions

  1. Rinse the jasmine rice under cold water until the water runs clear (about 2-3 minutes).
  2. In a medium saucepan, combine the rinsed rice, coconut milk, water, brown sugar, and salt. Stir until the sugar is dissolved.
  3. Bring the mixture to a gentle boil over medium heat. Once boiling, reduce heat to low, cover, and let simmer for 15-20 minutes. Check around the 15-minute mark to see if the liquid has been absorbed.
  4. After 20 minutes, remove from heat but keep covered for another 10 minutes to finish cooking.
  5. Peel, core, and cut the pineapple into small chunks.
  6. In a large skillet, heat the vegetable oil over medium heat. Add the pineapple chunks.
  7. Cook for 5-7 minutes, stirring occasionally, until the pineapple caramelizes and becomes tender.
  8. Add the vanilla extract and ground cinnamon to the skillet, stirring well. Cook for an additional 2 minutes.
  9. Fluff the rice gently with a fork after it has rested.
  10. Add the caramelized pineapple mixture to the rice, folding gently to combine without mashing the rice.
  11. Taste and adjust sweetness with more brown sugar if desired, mixing well.
  12. Scoop the sticky pineapple rice into bowls or onto plates.
  13. Garnish with chopped fresh mint for color and freshness.
