8 oz cream cheese, softened
1/4 cup granulated sugar
1/2 teaspoon vanilla extract
1/2 cup fresh strawberries, hulled and diced
1 tablespoon lemon juice
1/4 cup powdered sugar (for dusting)

Instructions
In a medium mixing bowl, combine softened cream cheese and granulated sugar. Add vanilla extract and beat until creamy and smooth (2-3 minutes).
In a separate bowl, mix diced strawberries with lemon juice, then gently fold into the cream cheese mixture.
Lay out wonton wrappers on a clean surface. Place about a tablespoon of cheesecake filling in the center of each wrapper.
Wet the edges with water, fold diagonally to form a triangle, and press to seal. Crimp edges with a fork for decoration. Repeat until all wrappers are filled.
Heat cooking oil in a deep skillet over medium heat until it reaches 350°F (175°C).
Fry wonton bites in batches for 2-3 minutes on each side until golden brown.
Remove with a slotted spoon and place on paper towels to absorb excess oil.
Dust fried wonton bites with powdered sugar using a fine mesh sieve.
