Strawberry Chia Pudding: A Delicious and Healthy Breakfast Option

This Strawberry Chia Pudding is a creamy, nutritious treat that pairs chia seeds with fresh strawberries. Ideal for breakfast, snacks, or light desserts, it’s simple to prepare and can be personalized with your favorite toppings. Enjoy a delightful blend of flavors and textures in every bite!

  • 1 cup almond milk (or any milk of your choice)
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup (or honey, if not vegan)
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced
  • 1/4 cup Greek yogurt (optional, for creaminess)
  • Fresh mint leaves (for garnish, optional)

Instructions

  1. In a medium-sized mixing bowl, combine the almond milk, chia seeds, maple syrup, and vanilla extract. Whisk until well mixed.
  2. Let the mixture sit for about 5 minutes to allow the chia seeds to absorb some liquid and swell.
  3. Stir the mixture again after 5 minutes to prevent clumping as it thickens.
  4. Cover the bowl with plastic wrap or transfer to a jar with a lid. Refrigerate for at least 2 hours, preferably overnight.
  5. Rinse the strawberries under cold water.
  6. Hull the strawberries by removing the green tops.
  7. Slice the strawberries into thin pieces (quarters or halves).
  8. Optionally, sprinkle a little sugar or drizzle honey over the sliced strawberries and let them sit for about 10 minutes to create a syrup.
  9. Remove the chia pudding from the refrigerator. If too thick, stir in a little more almond milk.
  10. In serving glasses or bowls, add a layer of chia pudding at the bottom (about a third of the way up).
  11. Add a layer of sliced strawberries on top of the chia pudding.
  12. Repeat the layers until the glass or bowl is full (2-3 layers).
  13. If using Greek yogurt, add a dollop on top of the final layer of strawberries.
  14. Garnish with fresh mint leaves for a pop of color and flavor.

  • Serve immediately for the best flavor and texture.
  • Assembled pudding can be stored in the refrigerator for up to 2 days, but consume within a day for optimal freshness.
