  • 1 cup fresh strawberries, finely chopped
  • 1 cup white chocolate chips
  • 1 cup powdered sugar (for dusting)

Instructions

  1. Cream together the softened unsalted butter, granulated sugar, and brown sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  2. Add the two large eggs, one at a time, mixing well after each addition. Pour in the vanilla extract and mix until combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry mixture to the wet mixture, mixing on low speed until just combined. Avoid overmixing.
  5. Gently fold in the finely chopped fresh strawberries and white chocolate chips using a spatula.
  6. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  7. Preheat your oven to 350°F (175°C).
  8. Line two baking sheets with parchment paper.
  9. Use a cookie scoop or tablespoon to portion out the dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.
  10. Bake for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
  11. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
  12. Once cooled, dust the tops with powdered sugar using a fine mesh sieve.
