  • 20 large Medjool dates
  • 1 cup cream cheese, softened
  • 1/2 cup crumbled blue cheese

  • 1/4 teaspoon black pepper
  • Fresh parsley, for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Carefully slice each Medjool date lengthwise on one side to create a pocket, being careful not to cut all the way through.
  3. Remove the pits from the dates by pinching the sides and pulling the pit out.
  4. In a medium-sized mixing bowl, combine the softened cream cheese and crumbled blue cheese. Blend until smooth and creamy.
  5. Add the chopped walnuts (or pecans) to the cheese mixture for added crunch.
  6. Drizzle in the honey and vanilla extract, mixing well.
  7. Season with salt and black pepper, adjusting to taste.
  8. Use a small spoon or piping bag to generously fill each date with the cheese mixture, being careful not to overstuff.
  9. Place the filled dates on a baking sheet lined with parchment paper.
  10. Bake in the preheated oven for 10-15 minutes until warm and slightly golden on top.
  11. Keep an eye on them to prevent burning; the cheese should be bubbly and the dates soft but not mushy.
  12. Remove from the oven and let cool for a few minutes.
  13. Optionally, garnish with fresh parsley for color.
  14. Transfer to a serving platter and serve warm or at room temperature.
