Instructions

  1. In a large mixing bowl, combine the all-purpose flour, 1/2 cup of granulated sugar, baking powder, salt, and 1/2 teaspoon of ground cinnamon. Whisk these dry ingredients together until well mixed.
  2. In a separate bowl, whisk together the melted butter, milk, egg, and vanilla extract until smooth and well combined.
  3. Pour the wet ingredients into the bowl with the dry ingredients. Gently fold the mixture together using a spatula or wooden spoon until just combined. A few lumps are perfectly fine; do not overmix.
  4. Cover the bowl with plastic wrap or a clean kitchen towel and let it rest for about 10-15 minutes to thicken slightly.
  5. While the batter is resting, prepare your frying station. In a deep skillet or heavy-bottomed pot, pour enough vegetable oil to fill it about 2 inches deep.
  6. Heat the oil over medium heat until it reaches 350°F (175°C). Use a candy thermometer or drop a small amount of batter into the oil; if it sizzles and rises, the oil is ready.
  7. Prepare the cinnamon-sugar coating by mixing together 1/2 cup of granulated sugar and 1 teaspoon of ground cinnamon in a shallow bowl. Set aside.
  8. Once the oil is hot, use a small cookie scoop or tablespoon to drop small amounts of batter into the hot oil, frying about 4-5 donut bites at a time.
  9. Fry for about 2-3 minutes on each side, or until golden brown. Use a slotted spoon to turn them halfway through cooking.
  10. Carefully remove the donut bites from the oil and place them on a plate lined with paper towels to drain excess oil.
