This Sweet Potato Feta Salad features roasted sweet potatoes, fresh greens, and tangy feta cheese, all tossed in a homemade balsamic vinaigrette. It’s a colorful, nutritious dish perfect for a side or light main course, offering a delightful combination of flavors and textures.

  • 4 cups fresh spinach or mixed greens
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup walnuts, roughly chopped (optional)
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon Dijon mustard

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a large mixing bowl, combine the diced sweet potatoes with olive oil, salt, black pepper, smoked paprika, and garlic powder. Toss until evenly coated.
  3. Spread the sweet potatoes in a single layer on a baking sheet lined with parchment paper.
  4. Roast in the preheated oven for about 25-30 minutes, or until golden brown and fork-tender, stirring halfway through.
  5. Remove from the oven and let cool slightly.
  6. In a large salad bowl, add the fresh spinach or mixed greens.
  7. Add the halved cherry tomatoes and thinly sliced red onion.
  8. If using, sprinkle in the walnuts for added crunch.
  9. In a small bowl or jar, combine the balsamic vinegar, honey (or maple syrup), and Dijon mustard.
  10. Whisk or shake until well combined. Optionally, add a tablespoon of olive oil for a creamier dressing.
  11. Set aside until ready to serve.
  12. Add the slightly cooled roasted sweet potatoes to the salad bowl with the greens, tomatoes, and onions.
  13. Sprinkle the crumbled feta cheese over the top.
  14. Drizzle the dressing over the salad, starting with a little and adding more to taste.
  15. Gently toss the salad to combine all ingredients, being careful not to break up the feta too much.
