Instructions

  1. Wash the sweet potatoes thoroughly under running water. Peel them using a vegetable peeler, or leave the skin on for added texture.
  2. Slice the sweet potatoes into uniform fry shapes, about 1/4 inch wide.
  3. Soak the cut fries in a bowl of cold water for at least 30 minutes to remove excess starch.
  4. Drain and pat the fries dry with a clean kitchen towel or paper towels.
  5. In a small bowl, mix sea salt, paprika, garlic powder, black pepper, and cayenne pepper (if using).
  6. In a large bowl, add the dried fries and drizzle with olive oil. Toss until evenly coated.
