These Twice-Baked Sweet Potatoes are a flavorful and healthy dish, featuring creamy Greek yogurt, cheddar cheese, and green onions stuffed into tender sweet potato skins. Ideal as a side or main course, they can be easily customized to suit your taste!

  • 4 medium sweet potatoes
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon smoked paprika
  • 1/2 cup Greek yogurt (or sour cream)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup chopped green onions
  • 1/4 cup cooked and crumbled bacon (optional)
  • 1 tablespoon fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes thoroughly under running water and pat them dry.
  3. Poke several holes in each sweet potato with a fork.
  4. Rub each sweet potato with olive oil, ensuring they are well-coated.
  5. Sprinkle salt, black pepper, garlic powder, and smoked paprika over the sweet potatoes.
  6. Place the sweet potatoes directly on the oven rack or on a baking sheet lined with parchment paper. Bake for about 45-60 minutes, or until fork-tender.
  7. Once baked, remove the sweet potatoes from the oven and let them cool for 10-15 minutes.
  8. Slice each sweet potato in half lengthwise and scoop out the flesh, leaving about 1/4 inch around the skin.
  9. In a large mixing bowl, combine the scooped-out sweet potato flesh, Greek yogurt (or sour cream), half of the shredded cheddar cheese, chopped green onions, and crumbled bacon (if using).
  10. Season the mixture with additional salt and pepper to taste.
  11. Mash the sweet potato flesh and mix until smooth and creamy.
  12. Preheat your oven to 375°F (190°C) for the second baking.
  13. Spoon the sweet potato filling back into the hollowed-out skins, piling it high.
  14. Sprinkle the remaining shredded cheddar cheese on top of each filled potato.
  15. Place the filled sweet potatoes on a baking sheet and return them to the oven. Bake for an additional 15-20 minutes, or until the cheese is melted and bubbly.
  16. Remove the sweet potatoes from the oven and let them cool for a few minutes.
  17. Before serving, sprinkle with fresh parsley and additional toppings if desired.
  18. Serve warm as a side dish or main course.
