  • 1/4 cup maple syrup
  • 1/4 cup coconut oil, melted

  • 1/4 teaspoon salt
  • 1 cup vegan chocolate chips
  • 1 cup mini vegan marshmallows
  • 1/2 cup crushed graham crackers (vegan)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine almond flour, rolled oats, coconut sugar, baking soda, and salt. Stir until well mixed.
  3. In a separate bowl, whisk together melted coconut oil, maple syrup, and vanilla extract.
  4. Pour the wet mixture into the dry ingredients and stir until well combined. The mixture should be crumbly but hold together when pressed.
  5. Line an 8×8 inch baking dish with parchment paper. Transfer the mixture into the dish and press down firmly to create an even layer.
  6. Bake for 15-20 minutes, or until the edges are golden brown. The base should be firm to the touch.
  7. Remove from the oven and let cool for about 10 minutes.
  8. Sprinkle vegan chocolate chips evenly over the top.
  9. Sprinkle mini vegan marshmallows over the chocolate chips.
  10. Sprinkle crushed graham crackers over the marshmallows.
  11. Bake for an additional 10-15 minutes until marshmallows are golden and chocolate is melted.
  12. Let cool completely in the pan to allow the bars to set.
  13. Lift the bars out using the parchment paper and place on a cutting board.
  14. Cut into squares or rectangles as desired.
  15. Enjoy fresh or store in an airtight container for up to a week.
