Ingredients

Scale
  • 1 pound spicy Italian sausage
  • 1 (16-ounce) package Velveeta cheese, cubed
  • 1 (10-ounce) can diced tomatoes with green chilies (like Ro-Tel)
  • 1 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon chili powder
  • 1/2 teaspoon cayenne pepper (optional, for extra heat)
  • 1 tablespoon olive oil
  • 1/4 cup chopped green onions (for garnish)
  • 1/4 cup chopped fresh cilantro (for garnish)
  • Tortilla chips, for serving

Instructions

  1. Heat a large skillet over medium heat and add olive oil.
  2. Add the spicy Italian sausage, breaking it into smaller pieces as it cooks.
  3. Cook for 5-7 minutes until browned and cooked through, stirring occasionally.
  4. Drain excess grease from the skillet.
  5. Reduce heat to low and add cubed Velveeta cheese to the skillet.
  6. Add softened cream cheese, cut into smaller pieces.
  7. Pour in the can of diced tomatoes with green chilies (do not drain) and stir gently.
  8. Sprinkle in garlic powder, onion powder, chili powder, and cayenne pepper (if using) and stir to combine.
  9. Cook over low heat, stirring frequently to prevent burning.
  10. After 10-15 minutes, the cheese should be fully melted and creamy.
  11. If too thick, add a splash of milk to reach desired consistency.
  12. Taste and adjust seasoning if necessary.
  13. Transfer the dip to a serving bowl or keep warm in a slow cooker.
  14. Garnish with chopped green onions and fresh cilantro.
  15. Serve with tortilla chips and enjoy!

Notes

  • For a milder dip, use regular Italian sausage instead of spicy.
  • Feel free to adjust the spices to your taste preference.
  • This dip can be kept warm in a slow cooker for parties.
